Ingredients:
4 salmon fillets
4 tbsp classic basil pesto
50g white breadcrumbs
25g grated fresh parmesan
Steamed green beans, to serve
Method:
1. Preheat the oven to 200C, fan 180C, gas 6. Put the salmon fillets on a non-stick baking tray, skin side down. Spread 1 tbsp of pesto over the top of each fillet.
2. In a small bowl, mix together the breadcrumbs and parmesan. Press the mixture on top of each fillet to form a crust.
3. Bake for 10-15 minutes, until the fish is opaque and flakes easily. Serve with steamed green beans on the side.
