Foodie Friday: Chicken Kebab Lite

chickenkebab(Serves 4)

Ingredients:
4 boneless chicken thighs, each cut into 3
2 garlic cloves, crushed
Finely grated zest and juice of 1 lemon
1 tbsp rosemary leaves, chopped
1 tbsp olive oil
A few squirts Frylight extra virgin olive oil
1/2 cucumber, chopped
2 tomatoes, halved and sliced
1 red pepper, deseeded and sliced
1/4 iceberg lettuce, shredded
2 tbsp parsley, chopped
100g feta cheese, cubed
4 pitta bread
1 lemon, cut into wedges

Method:
1. Season the chicken with salt and ground black pepper, put into a shallow container. Sprinkle over the garlic, lemon zest and juice, and rosemary. Drizzle over the olive oil and spritz with Frylight.
2. Heat the grill and cook the chicken for 15 minutes, turning until golden. Meanwhile, combine the cucumber, tomatoes, red pepper, lettuce, parsley and cheese.
3. Toast the pittas, split and fill with the chicken and salad. Squeeze over the lemon wedges and serve.
