Foodie Friday: Fiery Mince & Noodles

fierymincenoodles(Serves 4)

Ingredients:
2 tbsp olive oil
1 red onion, sliced
2 garlic cloves, chopped
2 bird’s eye chillies, deseeded and finely sliced
400g lean beef mince
200g rice vermicelli noodles
1 tsp sesame oil
100g halved Tenderstem broccoli
2 tbsp fish sauce
1 tbsp light soy sauce
1 tsp sugar
Small handful coriander leaves
Small handful peanuts

Method:
1. Heat the olive oil in a wok or frying pan and fry the onion, garlic and chillies until softened. Add the mince and cook for 10 minutes to brown.
2. Put the noodles in a bowl, pour over boiling water and cover tightly with clingfilm for 5-8 minutes, until softened.
3. Drizzle the sesame oil over the broccoli. Add to the mince with the fish sauce, soy sauce and sugar. Cook for 3 minutes.
4. Drain the noodles, divide between 4 plates and top with the mince. Finish by scattering over the coriander leaves and peanuts.
