Foodie Friday: Smart Smoked Haddock

Ingredients:
300ml skimmed milk
2 pieces smoked haddock, about 110g each
4 level tsp cornflour
2 tbsp capers, rinsed, drained and chopped
2 tbsp freshly chopped parsley
Salt and pepper

To serve:
250g new potatoes, steamed
2 carrots, peeled, finely shredded and steamed

Method:
1. Pour the milk into a pan and add the fish. Bring to the boil, cover and simmer gently for 2-3 mins. Turn off the heat and leave the fish in the pan for about 5 mins, or until it flakes when a knife is pressed into it. Drain the fish, reserving the milk, place on a plate and keep warm.
2. To make the sauce, mix the cornflour with 1 tbsp water. Bring the milk to the boil and add the cornflour mixture, stirring well so it thickens. Simmer for 1 minute, then add the capers, most of the parsley and season.
3. Spoon the sauce over the fish and serve with the steamed new potatoes and shredded carrot, with the remaining parsley stirred into it.
