Foodie Friday: Sausages with Lentils, Bacon, Peppers and Walnuts

lentil-salad(Serves 4)

Ingredients:
1 x 400g tin cooked green lentils in water
55g cooked crispy smoked bacon
6 Peppadew peppers or 1-2 roasted red peppers, sliced
A handful of walnut pieces or pecans, chopped
3 tbsp chopped mixed fresh herbs, such as parsley, basil and chives
2 tbsp olive oil
1-2 tbsp red wine vinegar or balsamic vinegar
8 pork sausages

Method:
1. Preheat a grill or barbecue. Drain the lentils, rinse them in cold water, then tip into a bowl. Crumble in the bacon and stir together with the peppers, nuts and mixed herbs. Grill or barbecue the sausages.
2. Mix together the oil and 1 tbsp of the vinegar with some seasoning. Mix into the salad, then taste and add a little more vinegar if necessary. Serve the lentils with the sausages or chop up the sausages and stir them into the lentil salad.

Tip: The lentil salad is equally good served with chargrilled or cold cooked chicken. For a picnic, cool the sausages before adding and pack in a plastic box.
