Foodie Friday: Passionfruit Party Cheesecakes

passionfruit-party-cheesecakes(Serves 6)

Ingredients:
12 ginger snaps
30g unsalted butter, melted
70ml half fat crème fraîche
200g soft cheese
40g caster sugar
Juice and zest of 2 lemons
Passionfruit seeds, to taste

Method:
1. Crush the ginger snaps and mix with the butter, then pat the mixture into 6 small bowls or ramekins.
2. Mix together the crème fraîche, cheese, sugar, lemon juice and zest. Spoon the mixture onto the biscuit bases and chill in the fridge overnight.
3. Garnish with passionfruit seeds before serving.

Top tip: Alternatively, you can garnish some of your cheesecakes with a raspberry coulis or fresh blueberries instead of passionfruit.

    Looks so yummy. Passionfruit and cheesecake would make a great combo, especially with gingersnaps! :)
