Foodie Friday: Plum & Yogurt Pudding

plum-yogurt-pudding(Serves 3-4)

Ingredients:
250g plums (or greengages), washed
1 tbsp runny honey
250g full-fat Greek yogurt

Method:
1. Stone the plums and put them in a medium pan with the honey. Cover the pan and place over a low heat for 3-4 minutes.
2. Leaving the pan covered, turn off the heat and leave to stand for 10-12 minutes while the plums continue to soften. Transfer the stewed fruit to a sieve over a bowl and allow the juice to drain. Reserve the juice and set aside.
3. Tip the fruit into a bowl and leave to cool completely. Crush the fruit mixture with a fork then gently swirl into the yogurt or layer in glasses to create a marbled effect.
4. Add some of the plum juice if the plums aren’t too watery – it’s better to add liquid rather than try to thicken the pudding if it’s too thin. Serve straight away.

Tip: You can also make this yogurt pudding using the kids’ favourite fruits – try stewed apricots, apples or pears.
