Foodie Friday: Hunger-Busting Veggie Balti

veggiebalti(Serves 4)

Ingredients:
1 tbsp sunflower oil
2 onions, chopped
1-2 tbsp balti paste
350g mixed diced butternut squash and sweet potato
400g can chopped tomatoes
1/2 cauliflower, cut into florets
Salt and ground black pepper
400g can chickpeas, drained
1 tbsp tomato puree (optional)
Handful fresh coriander leaves
Toasted mini naan breads, to serve

Method:
1. Heat the sunflower oil in a large pan. Add the onions and fry gently for 5 minutes, to soften. Add the balti paste and fry for a further 1 minute.
2. Add the diced butternut squash and sweet potato, chopped tomatoes, cauliflower, chickpeas and 250ml water. Season with salt and ground black pepper. Cover and simmer for 25 minutes, until the vegetables are tender.
3. 5 minutes before the end of cooking time, if the sauce needs thickening, stir in the tomato puree. Sprinkle with coriander leaves to serve.
