Foodie Friday: Vegetable Mixed Grill

veggie-mixed-grill(Serves 4)

Ingredients:
250g Portobellini mushrooms or other mushrooms of your choice
2 large beef tomatoes, sliced
2 red peppers, deseeded and cut into wedges
250g reduced-fat mozzarella, drained and sliced
2 garlic cloves, sliced
Fresh basil leaves
1 tbsp olive oil

Method:
1. Preheat the grill to high. Spread the mushrooms, the sliced tomatoes and wedges of pepper with space apart over a grill pan or baking tray. Top each tomato with some of the mozzarella, sprinkle over the garlic and top with a basil leaf.
2. Season it all generously with salt and ground black pepper, drizzle over a little olive oil and place under the hot grill for 10-15 minutes or until all the vegetables are tender and the cheese has just melted.
