Foodie Friday: Easy Beef Stew

Ingredients:
450g stewing beef
1 red onion, cut into wedges
2 garlic cloves, sliced
2 sprigs of fresh parsley or thyme, plus extra leaves to garnish
300g baby carrots
450ml hot beef stock
2 tbsp sundried tomato paste
2 tbsp balsamic vinegar
2 tbsp gravy granules

Method:
1. Preheat the oven to 180C, gas 4. Place all the ingredients in a large casserole dish and stir to combine.
2. Cook in the oven for 1 hour 30 minutes, until the meat and vegetables are tender. Sprinkle with the rest of the fresh herbs to serve.

Smart tip: This recipe works well in a slow cooker. Put everything in the pot and set on low for 6-8 hours.
