Foodie Friday: Bread and Butter Pudding

Bread-and-butter-pudding(Serves 3)

Ingredients:
80g slightly salted butter
225g day-old baguette, sliced into 1cm slices.
200g semi-skimmed milk
40g caster sugar
100ml double cream
1 tsp vanilla extract
Zest of half an orange
2 eggs, lightly whisked
80g raisins or sultanas
2 tbsp demerara sugar
A grating of nutmeg

Method:
1. Grease a medium sized pie dish. Lightly butter the slices of bread and put half of them in the bottom of the dish.
2. In a medium sized saucepan, heat the milk, caster sugar, double cream, vanilla extract and orange zest. Heat until the first bubbles appear, then immediately turn off.
3. Lightly beat the eggs in a large bowl and pour into the milk mixture, whisking continuously to make a custard. Pour the custard mixture through a sieve into a large bowl or jug.
4. Pour half the custard over the slices of bread. Sprinkle over the raisins or sultanas and one tbsp of demerara sugar. Layer with the remaining slices of bread and pour over the remaining custard.
5. Grate over the nutmeg and cover with cling film. Place in the fridge for 15 minutes, then remove the cling film and sprinkle with the remaining demerara sugar.
6. Preheat the oven to 180C/160C fan/gas mark 4. Place the pie dish in a large roasting tin and put into the oven. Pour boiling water from the kettle into the roasting tin until the water comes halfway up the sides of the dish. Bake for 30 minutes until golden and cooked through.
